Moon Valley Honey
Located in the foothills of the North Cascades near the Stillaguamish River, Moon Valley is the creation of
Kim Denend and Aaron Otto, who share their combined experiences in farming, healing, and activism, producing
farm fresh honey and other natural and health products crafted from nature's sweetest essence.
Starting out in 1999 as organic vegetable farmers, the couple's first five-acre plot was right next
to Full Circle Farm. In fact, Denend found their first farm when she was selling ice cream from a truck in
North Bend and trading for produce from Full Circle. "That's how I learned the land was available. Aaron and
I had been talking about farming; he'd always had a passion as his grandfather was a farmer, but I never
thought I would be one." Eventually, the couple decided to switch their focus and expand solely into honey.
"We already had some hives," says Denned, "and we believed that honeybees were amazing creatures and wanted
to get into saving bees."
Starting out with 20 hives, Moon Valley has now expanded to approximately 150. According to Denend,
they are currently using an Italian honeybee, which is both gentle and hardworking. Three different honeys
are available for CSA boxes and none are flavored says Denend. "They all get their wonderful flavor straight
from the source: the flower." Full Circle Farm customers can enjoy the mild, fruity flavor of Wild Blackberry,
delicious honeycomb flavor of Fireweed or ultimate sweetness of Raspberry honey.
Moon Valley now makes its home at Pragtri Farm in Arlington, which is a member community of the Evergreen
Land Trust. Pragtri has a rich history in organic agriculture, alternative energy, social justice, and
educational outreach. Moon Valley continues this proud heritage as a sustaining partner of the community.
In fact, a portion of their proceeds and dedication of their time goes to sustaining local community programs
that promote affordable housing, organic agriculture, and preserving farmland.
"We believe in giving back to our community, stregthening self-sufficiency, and promoting ecologically
sustainable values," says Denend. "The strength of our business comes from the health and vitality of our
family, friends, community, and the Earth."
When not tending to their thriving farm, it's all about spending time with the family along with Baghera,
their Blue Heeler, with a little skiing and hiking on the side. Of course, when it comes to cooking at
home says Denend; honey seems to be in everything. "It's our life," she says.
